Pumpkin Bread

Bright orange and white pumpkins are beginning to show their faces in the local stores.  At this time of year I long for comfort food and this pumpkin bread recipe is sure to satisfy.  Made with yogurt and Stevia it is healthier than most recipes.

Pumpkin Spice Creamer

Many people like their coffee to be flavoured.  Pumpkin Spice creamer flavours coffee with a taste of the fall.  Creamy pumpkin mixed with pumpkin pie spice makes this drink something to be enjoyed throughout the season.  You might want to double the recipe as it goes fast.Pumpkin Spice Creamer

INGREDIENTS

1/8 cup Stevia

2 tbsp pumpkin puree

1 tsp pumpkin pie spice

1 tbsp maple juice

3/4 cup half and half cream

1/8 tsp salt

DIRECTIONS

Whip all ingredients together until frothy.

Serve in hot coffee.

Pumpkin Spice Muffins

Fall is here and the trees are beginning to turn colour.  At this time of year the restaurant chains come out with everything pumpkin and I feel like baking some sweet treats.  Pumpkin Spice muffins are warm and fragrant.  They’re the perfect treat for a cold windy day.  Enjoy them with butter or pumpkin butter.

INGREDIENTSPumpkin Spice Muffins

1 1/2 cups flour

2 tsp baking powder

1/2 tsp salt

1 tsp pumpkin pie spice

1/2 cup sugar

1 egg

1/2 cup almond milk

1/2 cup cooked pumpkin

1/4 cup melted butter

Pumpkin Pie

Crustpumpkinpie

5 cups flour

3 tbsp brown sugar

1 tsp salt

1 tsp baking powder

1 lb vegetable shortening (cold)

1 egg

2 tbsp apple cider vinegar

cold water to make a cup of liquid

Mix 5 ingredients.  In a cup add egg, vinegar, and water to combine.  Fold wet ingredients into shortening mixture.  Shape in disks and refrigerate for at least an hour.

Pumpkin mixture

1 cup pumpkin

3/4 cup sugar

1 cup milk

2 eggs

1/2 tsp cinnamon

1/2 tsp ginger

pinch of salt

Pour ingredients into a rolled out pie shell from the crust made above.  Bake in a 450 degree Fahrenheit oven for 10 minutes.  Lower heat to 350 degrees and bake for an addition 35 minutes or until center of pie is firm.

Pumpkin Cinnamon Muffins

2 cups pumpkinPumpkin Cinnamon Muffins

2 cups sugar

1 cup oil

4 eggs beaten

1 cup wheat bran

2 cups flour

1/2 tsp salt

2 tsp baking soda

2tsp baking powder

3 tsp cinnamon

Mix wet ingredients in a large bowl.  Sift dry ingredients into wet and fold until combined.  Bake at 350 degrees Fahrenheit for about 25 minutes.

Pumpkin Pie

This recipe is from my mother.  I can’t count the number of times we’ve baked this pie for Thanksgiving and Christmas.  It has the perfect balance of cinnamon and ginger.  Serve with vanilla whipped cream or ice cream.
