Olive Oil Cake

The olive oil in this cake gives a savoury note to the taste. Try experimenting with different quality olive oils to find the version you like the best.

Ingredients

2 cups flour

Olive Oil Cake1 tsp baking powder

1 tsp baking soda

1 tsp salt

1/2 cup olive oil

1/2 cup maple syrup

1/4 cup lemon juice

DIRECTIONS

Sift dry ingredients  into a bowl.

Mix wet ingredients into another bowl.

Fold dry ingredients into wet ingredients and mix until just combined.

Pour onto a parchment lined loaf pan and cook at 350 degrees Fahrenheit for 35-40 minutes.

Cool before serving.

Light Cheesecake

I like to serve this cheesecake as an alternative to heavy pies on the holidays.  This dessert is light and fluffy.  It’s not as filling as a traditional cheesecake and can be made with any flavor of gelatin powder.

Ingredients

1 package cream cheeseLight Cheesecake

1 tub cottage cheese

1 small carton whipped cream

1 tbsp sugar

ginger snaps

pecans

2 packages jello® (your favorite flavor)

Grind up ginger snaps and place in the bottom of an 8×11 greased glass pan.

A variety of Shortbread Cookies

Shortbread has always been a favourite cookie in my household.  On holidays we used to make a platter of different types of the sweet treat.  Below I’ve included some cookie recipes that were always hits on our holiday platter.

1/2 cup brown sugarA variety of shortbread

1/2 cup white sugar

1 cup butter

1 1/2 cups flour

1/2 cup chocolate chips.

Homemade Dessert Pizza

Homemade Dessert PIzzaDessert pizza is becoming more and more popular.  This recipe for dessert pizza is easy to put together but the visual results are impressive.  This dessert is colourful and filled with fresh fruit and tasty vanilla pudding.  It’s sure to please family and friends.

Crust

1/2 cup sugar

1 cup butter

3 egg yolks

1/2 tsp vanilla

2 1/2 cups flour

1 twp baking soda

1 tsp cream of tartar

1/4 tsp salt

Cookie Base

Combine sugar, butter, egg yolks and vanilla until creamed.  Add the dry ingredients and blend well.  Transfer to a greased pizza tin or lined muffin tins.  Make sure the crust is not too thick.  Prick crust with fork and then bake at 350 degrees Fahrenheit for 12 to 15 minutes.  Cool.

Lime Shortbread

2 cups flour

1 tsp salt

3/4 cup softened butter

1/2 cup powdered sugar

1/2 cup sugarLime-Shortbread

4 tbsp  lime juice

Combine mixture and roll into a log on parchment.  Refrigerate until butter hardens.  Cut log into slices and put on a greased cookie sheet. Bake in a 300 degree Fahrenheit oven for 30 – 35 minutes or until the cookie bottoms are golden brown.

Molasses Cupcakes

1/3 cup butter

1/2 cup sugarmolassessMuffins

1 egg

1/3 cup molasses

1/2 cup almond milk

1 1/4 cup flour

 

1/2 tsp salt

1/2 tsp baking soda

2 tsp cinnamon

1 tsp ginger

Mix wet ingredients until well incorporated.  Add dry ingredients.  Bake in a 350 degree Fahrenheit oven for 20 to 25 minutes or until a skewer inserted in a muffin comes out clean.

Gumdrop Cake

1 cup butterGumDropCake

1 cup sugar

2 eggs

1 cup applesauce

2 1/2 cups flour

1 tsp cinnamon

1 tsp nutmeg

1/2 tsp salt

1 tsp baking powder

1/4 tsp baking soda dissolved in 1 tsp warm water

1 lb raisin

2 cups gumdrops

Mix wet ingredients until fluffy.  Add dry ingredients.  Fold in raisins and gumdrops and spoon into a large greased loaf pan. Bake in 300 degree Fahrenheit oven for 2-2 1/2 hours
