Lime Cookies

Lime is one of my favourite flavours.  These zesty cookies are made with lime juice and  is great any time of the year.  If you prefer lemon the recipe is just as good with lemon juice.  Enjoy!

Ingredients

Dry IngredientsLime-Cookies

2 3/4 cups flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

Wet ingredients

3/4 cup butter

1 cup sugar

2 eggs

2 tbsp lime juice

1 tsp green food colouring

Icing

3/4 cup icing sugar

2 tbsp lime juice

Mix together dry ingredients.

Cream butter and sugar.  Add eggs, lime juice and food colouring to wet mixture.  Blend well.

Add dry ingredients to wet ingredients and blend just until the batter is mixed.  In parchment paper roll dough into a cylinder and chill overnight in the refrigerator.

The next day remove the dough from refrigerator and cut in 1/4 inch slices. Place on a greased cookie sheet and bake in 350 degree Fahrenheit oven for 12-14 minutes.

When cookies are fully cooled prepare the glaze and drizzle over top of cookies.  Let set until glaze hardens.
